200 g (7 oz) dry fusilli pasta

2–3 tablespoons fresh tomato paste

Black and green olives (to taste)

1 garlic clove, finely chopped

2 tablespoons extra virgin olive oil

Grated Parmesan cheese (to taste)

Salt and black pepper to taste
Preparation

Boil the pasta. In your Classica® 4QT pot, bring salted water to a boil. Cook the pasta according to package directions (usually 8–10 minutes) until al dente.

Reserve some water. Save 1/4 cup of the pasta water before draining.

Make the sauce. Return the pot to low heat. Add olive oil and sauté the garlic for about 30 seconds.

Add the flavor. Stir in tomato paste and olives. Return the pasta to the pot and mix well, adding some of the reserved water to bring it all together.

Season and finish. Add salt, pepper, and Parmesan to taste. Stir to coat evenly.

Serve it up. Plate and top with extra cheese or fresh basil if desired.
