1/2 white onion, finely chopped

1 garlic clove, minced

1/2 red bell pepper, sliced

1/2 yellow bell pepper, sliced

2 tablespoons tomato paste

1/2 eggplant, thinly sliced

1 ripe tomato, sliced
-
1/2 yellow squash, sliced
-
1/2 zucchini, sliced
-
2 tablespoons olive oil
-
Salt and pepper to taste

Fresh basil for garnish
Preparation

Sauté the aromatics. Heat the Classica® 10” gourmet skillet over medium heat and add olive oil. Sauté the onion, garlic, red and yellow peppers for about 2 minutes.

Add tomato paste. Stir well to combine with the sautéed vegetables.

Layer the vegetables. On top of the base, layer in a circular pattern: eggplant, tomato, yellow squash, zucchini. Repeat until the skillet is full.

Cover and set the timer. Place the Classica® lid on with the temp tone valve open, and set the digital timer for 8 minutes. Press start.

Seal and finish. When the temp tone sounds, close the valve and continue cooking gently.

Glaze and garnish. Mix minced garlic with olive oil and brush over the top. Finish with fresh basil leaves.

Serve with elegance. Perfect on its own or with rustic bread.
