Ingredients

  • 1 cup pumpkin (cubed)

  • 1/2 white onion

  • 1 medium carrot

  • 1 small piece of scallion (white part)

  • 1 garlic clove

  • 1 thin slice of fresh ginger

  • 2 cups water

  • 1 cup coconut milk

  • Salt and pepper to taste

 

Preparation

  1. Add the ingredients. Place the pumpkin, onion, carrot, scallion, garlic, and ginger in your Classica® 4QT pot.

  2. Pour the liquids. Add the water and coconut milk. Season with salt and pepper.

  3. Start cooking. Cover with the Classica® lid, leaving the temp tone valve open. Cook until the tone sounds.

  4. Seal and continue. Once the tone rings, close the temp tone valve and cook for 8 more minutes on low heat.

  5. Blend and serve. Once finished, carefully blend or process until smooth and creamy. Done!
