200 g (7 oz) dry or fresh pasta of your choice

3–4 tablespoons fresh tomato paste

1/4 cup reserved pasta water

Black or green olives (to taste)

Garlic or fresh rosemary (optional, for extra flavor)

Grated Parmesan cheese (to serve)

Salt and pepper to taste
Preparation
Step-by-step Instructions

Boil the water. Fill your Classica® 4QT pot with water and bring it to a boil.

Cook the pasta.

For dry pasta: cook for 10 minutes.

For fresh pasta: cook for 5–6 minutes.
Stir occasionally.

Drain partially. Once done, drain the pasta but reserve some cooking water in the pot (about 1/4 cup).

Add the tomato paste. Stir in the fresh tomato paste directly into the hot pasta.

Seal and finish cooking. Place the lid on with the temp tone valve closed and cook for 1 minute over medium-low heat.

Add flavor. Toss in your favorite olives and, if you like, a touch of garlic or rosemary.

Serve beautifully. Top with Parmesan cheese, season to taste… and enjoy!
