Seafood Paella

9Qt. Paella Pan

Ingredients

  • 1 kg of parboiled rice
  • 1 pound of finely chopped white onion 
  • 1 pound of red tomato,finely chopped 
  • 1 head of garlic finely chopped 
  • 1 pound of pea 
  • 1 red pepper finely chopped 
  • 1 cup of parsley finely chopped
  • 3 Bay leaves
  • 50 ml white wine 
  • 30 ml of olive oil
  • C/N saffron in strand or yellow powder
  • salt to taste 
  • Paprika to taste 
  • 2 liters of fish stock

Seafood:

  • 2 lobster tails 
  • 1 pound of shrimp
  • 1/2 pound of heads of Octopus 
  • 1/2 pound of squid rings 
  • 1/2 pound of mussels 
  • 1/2 pound shrimp u12 
  • 2 liters of fish stock

 

Preparation

Preheat paella pan over medium heat and set Timer to 25 minutes. Sauté seafood with a bit of olive oil and reserve. Also sauté the onion, garlic, and when they are bright add tomato peas and laurel. Add the rice, the broth of fish, salt, the color yellow or the Saffron in threads, mix well and cover the paella pan with the Temp Tone control open. When the tone sounds we lower the temperature of the stove and close the Temp Tone control. When the Timer goes off we uncovered and add the white wine and seafood. We covered back in fire low for 10 minutes. We uncovered and to serve decorate with parsley and finely chopped red pepper.
